Sync with the Seasons

Sync with the Seasons

Originating in India over 5,000 years ago, Ayurveda is a philosophy and practice that calls upon the wisdom of nature for optimal health. Understanding the interconnectedness of nature, Ayurveda teaches us that our bodies don’t exist in exception to the natural world—they are, instead, a part of it, integrated with it, and dependent on it for our health and well-being.

During this interactive cooking class, Ayurvedic chef and health counselor, Stephanie Wright, will help you look at the seasons through a new lens by teaching you how to reconnect with nature and support yourself by using food as medicine. You'll learn the vital role that each of the six tastes play in our physiology, emotions, and mental state as well as how to prepare ingredients for optimal digestion.

Bring your curiosity and your appetite!

The dishes we'll be making (and eating!) include:

  • Ginger Pickle

  • Red Lentil Tahini Puree

  • Whole Wheat Chapatis

  • Roasted Brussels Sprouts and Radishes in a Savory Spice Blend

  • Grounding Beet Kitchari with Cilantro Date Chutney

  • Almond Date Shake

This 2-hour workshop will take place in a private residence in Sleepy Hollow. The cost is $125 per person, or $225 per pair.

Spring Equinox Ayurvedic Workshop

Spring Equinox Ayurvedic Workshop

In Ayurveda, rtucharya describes the cycle of the seasons. The word comes from the root "rtu" which translates into English from Sanskrit as “cosmic rhythm.” Within the great mandala of the yearly cycle, the Earth completes its orbit around the Sun, bringing cold and heat, dark and light, to our environment, including all creatures and our own bodies.

Spring marks a time of renewal and rebirth for all cycles, offering awakening, warmth, and growth. Kapha predominates during this time, as the forces of earth and water are strongest and exert their influence upon the earth and our bodies. The first signs of spring marks a time of renewal and rebirth for all cycles, offering awakening, warmth, and growth. We can see this process happening in nature as the first signs of spring emerge as death gives way to life: buds bursting from the trees, shoots leaping from the earth, a great rising amid the debris of winter. For nature, renewing herself through dying is the only way she can be reborn.

The process of rebirth can be hard on our bodies as we tend to experience symptoms such as allergies, asthma, sinus infections, colds, and chest infections, leading to mucus-producing cough and excreta as the body attempts to protect itself as the lymph and blood begin to recirculate after the winter thaw.

During this FREE workshop, you will learn how to harness the power of Ayurveda to keep your mind, body and spirit in balance as we transition into Spring on the Spring Equinox.

Kitchari (pronounced kich-uh-ree) is the traditional cleansing food of Ayurveda. The word “kitchari” means mixture and is a combination of split mung beans and white basmati rice with seasonal spices, herbs and produce.

Agni, or the digestive fire (referred to as metabolism in Western terms), is considered in Ayurveda to be the golden key to all health. Good agni means we are able to digest, assimilate, and absorb nutrients from our food. Weak or imbalanced agni means malabsorption and accumulation of ama, or toxins. Ayurveda believes that all healing begins with the digestive tract, and kitchari can give it a much-needed rest from constantly processing different foods while providing essential nutrients. The blend of rice and split mung beans offers an array of amino acids, the building blocks of protein. Its mixture of spices is believed to kindle the digestive fire, the Ayurvedic description for your innate digestive power, which can be weakened by poor food combinations.

Through the power of Ayurveda, you can take charge of your health by using food as your medicine.

Fall Equinox Ayurvedic Cooking Class

Ayurveda, a natural system of medicine, originated in India more than 5,000 years ago. The term Ayurveda is derived from the Sanskrit words ayur (life) and veda (science or knowledge). The equinox marks a powerful time of transition and by integrating the fruits and vegetables of the fall harvest, you will remain calm and rooted through the change of seasons.

During our virtual culinary class, we will learn how to make the following dishes:

  • Almond Date Shake

  • Fennel and Pear Salad with Creamy Tahini Dressing

  • Grounding Beet Kitchari

  • Spiced Sweet Potato Bread with Delicata Squash Butter
